![]() We will definitely be making this mahi mahi with pineapple mango salsa again and I’m sharing the recipe with you in the hopes that your family will enjoy it too. However, you could easily change up the toppings to suit your favorite flavors. The dinner was easy to prepare and was a big hit with the whole family. I knew the toppings would be the predominant flavors they would taste, so I chose pineapple, mango and red pepper knowing how much my kids like these flavors. When we got home, I decided to pair it with a topping that contained fruits and vegetables that my kids really like. Wait for at least 1 minute so butter is heated through. Melt butter in a cast-iron skillet over medium-high heat. Sprinkle blackened seasoning and salt, if seasoning does not already include it, over the filets and rub it into the fish. Dip fillets in flour, eggs, then bread crumb mixture. Cut the mahi mahi into 4 equal-sized filets and pat the fish dry with a paper towel. ![]() In another shallow bowl, combine bread crumbs and coconut. Fish are high in protein, omega 3 fatty acids, vitamins and minerals. Mahi Mahi is also an excellent source of vitamins B3 and B6, and selenium which is an antioxidant thought to have cancer protecting qualities. Place flour and eggs in separate shallow bowls. I chose it because it has a very mild flavor, like most of the white fish varieties, and because of its awesome health benefits. Roast fish at 400F about 5 minutes or just until the top is golden and center is just cooked through. Not likely.” But to my surprise, my daughter loved it and eagerly had a second helping. Add chopped mango, cilantro, green onion, lime juice, sriracha, honey and salt in a bowl and mix well together. I remember coming over for dinner to see that she had prepared salmon for dinner and there were no other proteins available. Done in less than 30 minutes Mahi mahi has a mild flavor and flaky texture that’s perfect for a low calorie and healthy meal. Serve with light, refreshing pineapple mango salsa to cool things down. The first time my daughter had it was at my mother’s house. Spicy blackened mahi mahi is a quick weeknight dinner that packs a serious kick. I have been serving wild salmon to my kids since each of them was about one years old.
